  • • Lime juice 30ml
  • • Sugar syrup 15ml
  • • Soda water
  • • Mint leaves

Steps

  1. 1. Muddle mint leaves with syrup
  2. 2. Add lime juice and rum
  3. 3. Add ice
  4. 4. Top with soda
  5. 5. Garnish with mint

Braised Pork Belly

  • • Pork belly 500g
  • • Rock sugar 30g
  • • Light soy sauce 2tbsp
  • • Dark soy sauce 1tbsp
  • • Cooking wine
  • • Star anise
  • • Cinnamon
  • • Scallion & ginger

Steps

  1. 1. Cut pork into cubes and blanch
  2. 2. Caramelize sugar in wok
  3. 3. Add pork and stir fry
  4. 4. Add seasonings and water
  5. 5. Simmer for 1 hour
  6. 6. Reduce sauce on high heat
